Mafalde Bolognese Sauce- Meat Sauce

Summary: Mafalde Bolognese Sauce is a hearty, rich , flavorful and filling meat sauce. This is comfort food to me. This dish is even better the next day.

Ingredients
- 1 lb of Mafalde Pasta. (or your choice of pasta)
- ½ lb beef
- ½ lb veal
- ½ lb sausage, no casing.
- 1 carrot, diced
- 1 onion, diced
- about 5 cloves of sliced garlic
- ¼ cup heavy cream- (optional)
- 2 large cans of whole tomato’s , Crushed tomatoes works fine too. So your preference.
- Salt, pepper, and if you like crushed red chili’s. Adjust to your liken.
- Grated cheese ( optional) to your liking.

Pasta Fagioli

Summary: Pasta Fagioli could also be a vegetarian soup, just leave out the pork.
Ingredients
- I use canned bean just because it’s easier and faster, 2 large cans of fagioli or cannallini beans their the same.
- ½ a lb of bacon try not to use a flavored bacon. Panchetta’s even better, use what you have.
- 4 cloves of garlic
- 1 large onion or 2 medium sized onions
- 2 peeled carrots
- medium size dry chilli flakes
- about a tea spoon full salt,
- ground pepper
- extra virgin olive oil
- grated cheese a hard firm Italian cheese like pecorino romano, granna padanna or a parmigiano-reggiano.
- 1 can of tomato sauce, or a can of tomato paste you can even use ketchup about a 4-7 second squeeze
- About a pound of dry pasta, whatever shape you have you can combine partial boxes and then cut them on a board when their cooked.
- About a quart of chicken stock, vegetable stock or water. DONT use beef stock .

Ingredients
- 1 bag of frozen shrimp, cleaned with out the shell. This isn’t my first choice but every supermarket has 5 lb bag or so. Its just easy.
- 1 pound bag of dry capellini.
- 1 handful of fresh mint.
- 2 cloves of garlic.
- ½ a pound of fresh peas, frozen will do.
- Olive oil ,
- salt & pepper,
- touch of butter.

- cut up chicken, I use the family pack, you can use wings, I like all drumsticks.
- About a quart of buttermilk.
- Regular bench flour
- cyan pepper
- 1 tablespoon of chili powder
- 1 tablespoon of salt and pepper
- About 2 cups of oil I use peanut oil or canola oil

- 12 large shrimp cleaned and dshelled, I actually prefer it shell on has more flavor. Americans arent really down with removing their own shell.
- ½ cup olives no pits , I like the big green Sicilian olives, use what you like.
- ½ cup capers, rinse in cold water before using.
- 1 lemon , take off rind and squeeze juice into separate bowl. Keep the rind.
- 3 cloves of fresh sliced garlic.
- 1 orange for it’s zest.
- Extra virgin olive oil.
- I like a green leafy veg like spinach, broccoli rabe. Beet tops, Swiss chard, or whatever you want.

Summary: Swordfish Milanese- this is one of my favorite dishes with any steak like fish. (Shark , Mahi mahi , cobia, halibut etc. This dish is very easy and always a big hit with people who are afraid of fish, or what they call fishy. What they really mean is a full flavor fish . Mackerel , Tuna, Albacore, Bluefish, Sardines, etc. are what I consider fuller flavor fish.

Ingredients
- 1 ½ lbs of fresh swordfish, or have the fish monger cut you 2 pieces to your preference.
- 1 lemon
- ½ cup seasoned bread crumbs
- extra virgin olive oil
- good coarse sea salt.

- 1 fresh ripe- means a little soft to the touch.
- 2 key limes, if you cant find key limes sub regular limes. There is a difference but I believe in doing what you can.
